When it comes to finding and making the best food during the summer, I always think that recipes should not only be delicious, but refreshing and simple to make so you can enjoy them in the warmer temperatures! I’ve gone to BBC Food and looked through their recipes, and I’ve picked out a few which I think are perfect for the summer season!

Fiery Red Rice Salad

This great recipe from Mary Berry uses a particular rice known as Camargue red rice, which when cooked, cooled, and mixed in with carrots, spring onions, chillies, and a range of other great flavours, makes for an epic dish! This is the sort of thing you can serve at a summer barbecue with friends, and you can always switch up the recipe if you want different things! If you’re not a fan of spice then I’d recommend removing the chillies and crumbling in some feta cheese, it makes for a great combo!

Roasted Summer Vegetable & Feta Quiche

This recipe from Rachel Phipps is another great option if you’re having friends over and need a truly crowd–pleasing dish! This colourful quiche brings together the best seasonal vegetables and the best thing is once you’ve baked it, it can last for a few days in the fridge! Not only is this a great vegetarian dish, but you can make it last for a few dinners or lunches, meaning it’s really good value for money, which I think is something we all need this summer.

Strawberry, Avocado & Spinach Rolls

This fun, simple recipe, again from Rachel Phipps, brings together a unique group of ingredients to make something truly refreshing and flavourful! If you want to feel like you’ve stepped somewhere in the Mediterranean, then these unique snacks are for you. It marries together the perfect combination of sweet and savoury into a refreshing, healthy dish which is perfect for barbecues, breakfasts, lunches, dinners, or even for a late-night snack if you’re feeling daring!

Chia, Yoghurt & Granola Trifle

This gorgeous recipe from Nadiya Hussain is the perfect, simple and delicious kind of summery dessert or even an indulgent breakfast! When the temperatures rise, it can feel pretty tiring getting your ovens on and labouring over a cooked breakfast or something else hot. This dish is relaxing and simple to prepare, and it is guaranteed to fill you up and get you set for your day in the sun! Or if you make it as a dinner party dessert, it is certainly guaranteed to impress your guests and be a great conclusion

Pancakes With Roasted Peaches, Nectarines & Lavender Honey

This fun recipe from Michael Caines gives our British favourite of pancakes a truly summery twist with these wonderful fruits, and plenty of floral notes brought in by the lavender! This is the sort of dish perfect for breakfast, an indulgent afternoon snack, or the centre–piece for a group picnic out in your favourite park! Also, if you’re somebody who relishes in the cottagecore aesthetics and way of life, then I would say this is the perfect dish for you to enjoy whilst watching nature bloom as summer takes the stage!

Of course, if none of these tickle your fancy then you can browse through the abundant options on the BBC Foods website! – in my view, however, you can never really go wrong with a classic charcuterie or cheese board, which you can always customise yourself and cater to any allergies/dietary requirements that may come up! Whatever you choose, make sure you enjoy eating well this summer!
