I enjoy baking as a student, however since coming to uni, I have been more conscious about ingredient costs and sharing a kitchen, therefore I like baking things which require only a few ingredients and which do not make much mess.

I enjoy following the BBC Good Food website as the recipes are easy to follow and include pictures so I know what I am aiming to achieve with my bakes!

I choose to shop at Lidl for ingredients as they are cheaper and I do not mind buying the own-branded ingredients to reduce my costs.

Below are some of my favourite treats to bake!

No-bake cheesecake

I love making cheesecakes as they are one of my favourite desserts and they can be homemade in around 30 minutes, therefore are quick to make which fits in well with my uni schedule!

Ingredients are relatively minimal as the biscuit base only requires melted butter and digestive biscuits, the filling involves mascarpone cheese, icing sugar and caster sugar.

Toppings can be changed for fruits or chocolates depending upon what I fancy making, or what is in budget on the baking day.

Red velvet cupcakes

Red velvet cakes have always been a favourite of mine, the BBC Good Food website has an easy-to-follow recipe which only takes 15 minutes to bake.

The recipe makes 12 cupcakes, so these are good to share with your housemates or to last you a few days!

Brownies

I enjoy baking brownies as they have long been a favourite dessert of mine, especially ones with chocolate chunks and a gooey centre.

The BBC Good Food recipe is rated 5 stars by 2.5K people who also agree these brownies are incredible! They are titled ‘best ever chocolate brownies’ and they truly are!

Cookies

Another classic but easy dessert to bake is cookies, an easy recipe to individualise depending upon what you are craving!

For instance, simple chocolate chip cookies can contain white, dark, or milk chocolate. I particularly enjoy white chocolate and raspberry as a combination!
